Spinach Ricotta Pie

This delicious pie is a great way to use your homemade ricotta cheese!  It is so creamy and delicious and always receives great reviews.  It is great for company and would be perfect to serve at a brunch, although we like it for dinner also!

Spinach Ricotta Pie

Ingredients:

  • 1 pie crust  
  • 3 tablespoons butter
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 10-ounces fresh spinach, chopped
  • 1/4 cup chopped sun-dried tomatoes
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 16-ounces homemade ricotta cheese (3 very loosely packed cups) (store-bought will work as well)
  • 8 ounce mozzarella cheese, grated
  • 1/2 cup grated Parmesan cheese
  • 3 large eggs, beaten

Preparation:

Preheat oven to 350°F. Place the pie crust in a 9-in pie dish.  Fold the edges under and crimp the edges.  Put the pie dish in the refrigerator.

Melt the butter in a large cast-iron skillet over medium heat.  Add the onion and saute until translucent (about 5 minutes).  Add the minced garlic and saute for 1 minute longer.  Mix in the spinach, sun-dried tomatoes, salt, and pepper.  Cook and stir until all the spinach is wilted (It should shrink down a LOT.)

Combine ricotta, mozzarella and Parmesan cheeses in large bowl. Mix in the eggs. Add the spinach mixture and blend well.

Take the pie dish out of the refrigerator and spoon the cheese mixture into the pie crust. Bake for 50-60 minutes or until the filling is set in center and brown on top.  Let stand 10 minutes before serving. Cut the pie into wedges and enjoy!

    Would you think frozen spinach would be okay? I just found 4 bags hiding in the bottom of the freezer :) I am so excited to try the homemade ricotta! Thanks!

      Hi Elaine! I think that the frozen spinach would be fine. I would just make sure that all the liquid was squeezed out of it before I added it to the saute pan and then saute it until any remaining liquid has evaporated.
